Back on track with my weekly meal planning. I do it every week and I’m hugely addicted, but I keep forgetting to record my recipes, so every week I’m scrambling to come up with new ones. Hopefully, by posting them here, I’ll have an easy reference to come to.
And in two weeks, when I finally join the cool kids’ world of smartphones, maybe I’ll find an awesome meal-planning app to help me even more!
Here’s what we ate last week.
Tuesday: shrimp and asparagus risotto (this was my first attempt at risotto and it was a success! I felt like such a chef! I’ve also been experimenting with gluten-free recipes and really loved this one.)
Wednesday: roasted chicken, sugar snap peas, and salad
Thursday: chicken tortilla soup with leftover chicken and homemade broth
Friday: roasted veggie pitas (this recipe comes to me courtesy of my neighbor and it is delicious. Just toss the veggies in olive oil with cumin, garlic, salt and pepper and roast in an oven or on the grill. Serve in warm pitas with an avocado-sour cream dressing: mix sour cream, one avocado, dash of lime juice, and some cilantro.)
Saturday: homemade pizza
Sunday: chicken philly cheese steak sandwiches (no bread for me) and sweet potato fries
