Today I’m going to share my husband’s mojito with you.
Although that sounds strangely dirty, I assure you that it isn’t.
Instead, it is a drink full of deliciousness, perfect for claiming these last days of summer. While working in Florida for the summer before we were married, the hubs picked up this recipe from some friends who originated from south of the border. In short, it’s the best mojito recipe ever.
So, take this recipe and declare today: Mojito Monday.
*Mango rum (this is key–don’t use anything else!)
*Fresh mint leaves
* 7-UP or club soda
* A clear glass (because it’s pretty to look at)
Cut the limes into quartered wedges. Squeeze the limes to release some of the juices into the bottom of the class. Top the lime juice with sugar and mint leaves, then smush them all around to crush the mint up a bit. Add a generous splashing of the mango rum. (Warning: Be careful with that stuff–you won’t even know it’s alcohol. Even my mother gets tipsy off this stuff.)
Next, fill the glass up with 7-UP or club soda, add the limes back in, top with crushed ice and swirl gently.
For a nice touch, add some sugar to the rim of your glass and garnish with a lime wedge.
