What’s that? Two posts in one day?
I’m on fire!
Or I’ve just had three cups of coffee! (Yes, that one.)
Today’s shopping was awful. I was lured into believing it could all go as swimmingly as last week, when Jake slept the entire time and woke up literally just as I was putting the last bag in the cart at the checkout. But, no.
This time, he cried the entire time. I was able to keep him calm enough by moving the cart, but he erupted in screams the moment I would stop.
I looked like a maniac at the checkout, trying to load groceries and rock him and roll the cart all at the same time. I was so frazzled by his screaming that I forgot the 50,000 coupons I had spent Sunday clipping and just about gave the poor clerk a heartattack when I remembered them the second I swiped my card and shouted, “Crap!!”
But I’m a woman on a mission. My meal-planning is easily saving us $300 a month, so I’m not giving up now. This week we’re having:
Monday: Chicken philly-cheese steak sandwiches
Tuesday: Using leftover green peppers and onions into omelets and bacon
Wednesday: Using leftover bacon into potato soup and homemade bread (can’t wait for this one!)
Thursday: autumn skillet of chicken thighs, carrots and onions over rice (just brown the chicken in some EVOO, then pop the whole pan with the veggies into roast in the oven. So easy and so good.)
Friday: leftover chicken will be repurposed into chicken enchiladas
Saturday: homemade pizza
Sunday: good ol’ spagehtii
