Yes, I realize it’s Tuesday. But, really, who’s keeping track? I was so flustered after the shoe shopping debacle I witnessed while grocery shopping for the week that I just didn’t have the heart. Sigh.
So, here’s the plan for the week, with a lot of input from my Facebook peeps. I came in at $131, counting diapers, so still doing pretty good. I’ve also saved almost a whole month of tuition costs using the SCRIPS program at Ada’s preschool, so that’s awesome. A few bucks here and there really do add up, and we are going to need it more than ever, as Ben just found out he is getting another pay cut with the new teachers’ contract for the year. Yay!
Monday: I made roasted chicken quarters with potatoes, broccoli and salad. And vodka. It was a tough day.
Tuesday: I had planned on using leftover chicken into a chicken tortilla soup, but we ate all the chicken (again, it was a tough day), so I’m not sure what I will do. Maybe just have a veggie soup?
Wednesday: pan-seared honey glazed salmon with lime, rice and veggies
Thursday: lasagna (making two pans for a friend about to have a baby)
Friday: shrimp tacos
Saturday: quinoa meatloaf (Yes, I’m sure Ben will love this one.)
Sunday: pizza and movie night with Sophia the First!
