You guys are going to love me for this recipe. Seriously. It’s the best chicken salad you will ever eat. And in keeping with my favorite theme, it’s easy, although uncharacteristically and unlike my best-ever molten chocolate lava cake, pretty healthy.
I love making this chicken salad; it’s a simple lunch on salad or wraps, and my kids love it. Or, you can fancify it for a summer party or shower by serving it on some buttery croissants.
Best Ever Chicken Salad
*Shredded chicken (If I’m making a bunch of salad, I’ll roast some chicken in the crock pot and shred; otherwise, just pop a breast in a pan with water and cover until cooked. Easy.)
*Equal parts mayonnaise and plain Greek yogurt
*Sliced celery (optional)
*Dried cranberries, like Craisins
*Fresh or dried basil.
While your chicken cooks, dice some apples and spritz some lemon juice over them.
Mix equal parts of the mayo and yogurt in a bowl, then toss the rest of the ingredients in.
Stir the basil and chicken in at the end.
And there you have it: the world’s best ever chicken salad.
